Recipe
for mango salsa

- 1 mango
peeled, and chopped (1 cup )
- 1 medium sweet green pepper, seeded and
chopped (3/4 cup )
- 1 small red onion, finely chopped
- 1 jalapeno
pepper, finely chopped
- 2 tbsps. pineapple juice or peach nectar
- 1 Tbsp lime
juice
- 1/8 tsp. salt
- 1/8 tsp. pepper
Stir together mango sweet pepper, onion, jalapeno
pepper, pineapple juice, lime
juice, salt and pepper in a large bowl. Cover and refrigerate up to 3 or 4 days.
Makes 1 1/2 cups
