Recipe for corn salsa

 

Corn Salsa

  • 1 can whole kernel corn, drained
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped red onion
  • 1 tomato, chopped
  • 1/4 cup sliced ripe olives
  • 2 Tbsp. chopped pickled jalapeno peppers
  • 1 tsp. pickled jalapeno pepper juice
  • 2 Tbsp. cider or red wine vinegar
  • 1/2 tsp. garlic salt
  • 1/2 tsp. pepper

Combine all the corn salsa ingredients in a large bowl. Cover the corn salsa and chill for several hours. Yield: 4 cups
